What kind of flour are you using?
Lately the answer may be Cassava Flour, or Rice Flour, or none at all. Gluten free diets are popping up everywhere,and they are not just for allergies anymore, but what exactly is gluten? Well to make it simple, gluten is a protein found in wheat, rye, and barley. (damn! that means beer). Gluten gives breads and baked items flexibility to rise, and also gives them the ability to absorb, for dunking . There are some easily obtainable alternatives, most of which can be found in Health food stores and some Asian markets. When it comes to substituting for Wheat Flour, Tapioca Flour (made from Cassava root) or Rice Flour, work well, but need to be adjusted. Some other options to gluten are, Xanthum Gum, Guar Gum, Quinoa and Amyranth, again found in Health Food stores. Some of the alternatives have different applications and purposes, so if you have a specific question, just ask and I will do my best to help without over complicating it. We are working on gluten free products for the New Year, but if you would like to share recipes, comments, or questions, bring it on.

I’m so excited to hear that you are working on gluten free products in the new year. I’m a huge fan of your stuffed cupcakes…like everyone one else…but it pains me to know that my husband can’t even try one b/c he has Celiac Disease and can not have gluten. Good luck with your experimentation!
P.S. Bard’s Tale Gluten Free beer is really good….the only good one around (in our opinion) and they sell it in NJ.

Many thanks for tailoring gourmet desserts to a gluten free crowd! As one who can not have anything with gluten in it, it’s rather difficult at times to find baked goods that are truly unique such as birthday cakes, gourmet pastries and cupcakes. I look forward to seeing the new additions!
